Making... Strawberry Pretzel Salad

This is one of my sister's favorite salads. She just loves it and always asks me to make it for any family function. So in her honor and to help her get through the next few weeks (she is 8 1/2 months pregnant and very ready to be done), I thought that I would make it and share another family favorite with you all.

Strawberry Pretzel Salad
Here are the ingredients that you will need.

In a food processor, crush pretzels to make 2 cups. Then combine with 1/4 cup sugar and 1 stick melted butter.


Side note: I opened the freezer to get out my strawberries and I found this container of bugs. Obviously, Hayden's doing. I asked him why they were in the freezer and he said, "Because there were hot and needed to be frozen to feel better."

Next, press the pretzel mixture into a 9 x 13 pan.

Bake at 350 degrees for 10 minutes and cool completely. (Notice the time. Babies are napping and Hayden is playing. This recipe went much better than the banana bread I made at about 5pm.)

While the crust is cooking, bring 2 cups apple juice to a boil.

Dissolve 2 boxes of Strawberry Jello into the juice, once completely dissolved add 20oz of frozen strawberries still frozen. (I take my strawberries out when I start the crust so that they are easier to get out of the container.

Once the Jello and strawberries are combined, place the bowl in the fridge to chill but not set firm.

Meanwhile, mix together 8 oz soften cream cheese, 1 cup sugar and 1 tub cool whip.

Once crust is cool, spread cool whip mixture on top of pretzel crust. Once jello mixture is slightly firm, pour on top of other two layers.

This is the finished product. Dish is best when chilled over night.

MMMmmmmm! That looks so yummy! Is this a personal recipe of yours? I am just wondering if variations would work on this as I am trying to avoid high fructose corn syrup... hmm, you think it would work with homemade whipped cream instead of cool whip?

Gosh, you guys call this salad? Here we call anything very healthy without sugar and fat salad. I'll call this desert, that's how good it looks.

Wow, I'm wondering if I could make this with another fruit. We are not strawberry eaters, but this looks so yummy.

I was thinking and you could maybe use peaches. ie peach jello, canned or frozen peaches and peach juice.
